It is Spring turkey season in Texas and here is the way I like mine. Fillet the meat off the breast, slice, and fry.

 
Hmm never tried that. Turkey steaks eh? I got a bunch-o-gobblers round here. Better break out the .22 :{)
 
Got a 18#er in the GOSM now for another hour then into the fryer
 
Soooooooo!!!!!!! you smoke it then fry it. never heard of it, but I'm very new to this smoking thing. So I guess that's something new I Get to try. How long do you smoke it before you fry it?
 
On another forum, someone suggested to run the sliced turkey thru the tenderizer one time prior to frying. I will do that next time.
