Looks like a tasty pig for sure. The issue with the skin may have come from basting. If you do it too much it can keep the skin from crisping

Looks good, how long did it take to cook?

We roasted it for 7 hours.

it really crisp up nice.. I do indirect heat for most of the cook then the last 45 min to hour put the wood and coals directly under pig
