Pics outside look bad cause the sun was out. Wood burning UDS using oak wood. Temps where the ribs were at was around 500 degrees, in the dome about 350. A hour and a half everything was done. Ribs temped at around 200. Added bbq sauce the last 20 mins, just long enough for it to get sticky. Not fall off the bone but bone pulled clean. Small smoke ring but the smoke flavor was right on. The half racks and chicken was for my parents, the full rack was for my family.

Eatin good in PA today . Nice job on all of it , but that sausage looks awesome ! Wow . I like cookin on the hot fire .
 
Now that's a nice variety Adam. A little bit of something to satisfy all tastes.
