These are great for snacks, bloody Mary's, salads, and just about anything in between.
3 cups water
4 tsp pickling salt
1 tsp sugar
1.5 cups cider vinegar
1.5 cups white vinegar
1/2 juice of a lime
1/2 lime sliced
3 tsp black whole peppercorns
2 jalapenos
3 tsp cayenne pepper
6 cloves of whole garlic cloves
2 tbs minced fresh garlic
4-5 sprigs of fresh dill
2 lbs green beans rinsed and trimmed
1. Mix warm water with 3 tsp salt until dissolved- set aside to cool to room temp
2. In a bowl (not metal) mix; vinegars, sugar,peppercorns, lime juice, lime slices, cayenne, jalepenos, and garlic.
3. Bring large pot of water to a boil with 1 tsp of salt, add trimmed green beans into boiling water for about 2-4 minutes until bright green, remove green beans, rinse, and place in an ice bath for 5-10 minutes.
4. Put sprigs of dill in bottom of a large jar or spread evenly into smaller jars, place green beans on top, and pour mixture over.
5. Place in refrigerator for a minimum of 72 hours and enjoy (I usually wait about 5 days to get optimal flavor).
