I was going to make the Spicy stick recipe but dont feel like trudging through the snow to get to the smoker.

SO

Im going to use the stick recipe for some GB jerky.

I used my heat gun and made the jerky nozzle just a bit thinner.



Got some of the ingerdients ready to go. Replacing the sugar with 4 tsp of Trehalose. This is done because i will be freezing the jerky after vac sealing.



All mixed, let this sit for awhile so it all comes together before adding to the meat.

The stuffer worked great again.

Loading the tube for 5 lbs....Sorry for the shadows



Front bulkhead and small nozzle adaptor shown.



Front cap in.



Take the small nozzle cap out.



Install jerky tube.



Small rolls of wax paper i cut. Easier to extrude the jerky onto.



Can you spot what i did wrong?



Notice the jerky is uneven? and has some blowouts. This is due to having to much liquid in the mix. As they say MY BAD
  DO'H



Dont feel like walking to the snow for a smoker so this batch getting dehydrated to.

Is he going to be making the stuffer's commercially?

I'm not sure if he is or not. I do know that he has 5 to build for people.

He does some pretty close machining on some of the parts.
