We dropped by Kroger for a few things a few days ago and I saw big packs of fresh wings! I suddenly wanted to grill some but right next to them was big packs of drumsticks. Wings are crazy these days, over $4/lb. I remember when butchers threw them out... the drums were $1.39/lb. I figured I'd do them wing style.
Today after thinking awhile on it I decided to do them a bit differently. This sauce is fantastic and I highly recommend you try it on wings, drums, or even thighs.
1/2 cup sweet baby rays
1/2 cup Louisiana sauce
2 tbs chili garlic sauce
6 finely minced jalapenos
Very low simmer for an hour, lid on.
I seasoned the drums with extra fine Himalayan salt, nothing else.
Primo setup indirect with the dome temp @ 300°f. They cooked for 40 minutes, at that point they registered around 180°f internal. Then I sauces them and gave another 7 or 8 minutes to set up.
Spicy with serious zing, mouth watering.
Cheers
