Spare ribs

Diving into spare ribs. Never cooked them so we’ll see how it goes. Gonna do the 3-2-1 method. Got the smoker coming up to heat and got the ribs sweating with Heath Riles BBQ rub on them. No I didn’t trim them, see how it goes.

Whole spares are my favorite . I take any thin sections off , and leave the rest .
I have better results probe tender . You almost have to try it all ways to figure out what works for ya . Be watching .

Looks good, the only thing I trim on spares is the loose flap on the backside, usually boil it up and give it to Bob. I'm not a 3-2-1 guy either, I go with no wrap and start probing with a toothpick at around five hours going low heat. chopsaw chopsaw is right, you have to find what way works for you. The only time I tried wrapping the ribs turned out FOTB, never my goal. RAY
 
Sowsage Sowsage i found Heath Riles while doing a Instagram search and found out he lives in the next town over from me. He has a pretty good pedigree for cooking wins. And I’ve used the same rubs on the butts I cooked, it has a great flavor.

sawhorseray sawhorseray do you spritz you’re ribs during the cook? I do have a water pan in with them.

Most of the time I will spritz about every hour with a apple juice, ACV, water combo, about a third each. Sometimes I'll baste on a little SBR the last half hour of the cook, sometimes just naked all the way. More often than not lately I'll go naked all the way and dip at the table if needed, it's nice to taste that rub and smoke in the bark. RAY
 
And at the 3 hr wrap they are looking good. Throwed some brown sugar and a little fruit juice on them and wrapped in foil.
Butterflied a porn loin, stuffed with pimento cheese, mozzarella, and roasted red peppers. Rolled and tied and into the smoker. Coated with Smoke Daddy Mojo rub.

Thanks SmokinAl SmokinAl And 3-2-1 3-2-1 They tasted great. For a first time cook I feel like I did pretty good. One question....I see folks ribs that just shine like they are candy coated. How do they achieve that?
