I have been looking @ recipes and most suggest the 3-2-1 method. Can I just smoke them for 6 hours straight? Has anyone does this? Does this screw up the ribs? Are they tender?
 
Many people do them straight. I did 6 racks a few weeks ago and they were perfect. just watch your temps and get too hot and over cook

How long does it take normally? This is my first time smoking ribs.
 
Ive tried both and honestly prefer straight cooking over wrapping. Not that wrapping ribs is bad, just my preference

Try them both ways and see what you prefer

I usually do st. louis style, I smoke them unwrapped the whole time, usually takes 6-7 hours at 225. got to say also if you can smoke them a day or two before you need them and then just heat in the oven when ready to eat in my opinion like most smoked meats they taste better. just a thought.
 
I’ve started using SmokinAl’s method and it works great. I also never wrap and they come out great every time.
