Sorry just finished pictures.

Rubbed with salt and pepper. Thats it. Well an hour before pulling I actually put some of my West Texas BBQ sauce on 'em ( which I hardly ever do). Smoked with Pecan.

Wish I had a better camera so you could see the juice in those ribs. Not big on West Texas BBQ on pork, but was really a nice change of pace. Garlic bread, a big slice of onion, BBQ ribs and a cold long neck. It just don't get much better.

I have gone nuts trying to master the 3/2/1 or 2/2/1, we always just threw 'em on the pit till they were done. So thats what I have gone back to, I get to enjoy more ribs the old way...LOL I like my ribs with a bit of a bite, but now its a challenge getting 'em off the bone like that, So I use a knife and then just gum the hell out of 'em! I hardly ever sauce, but todays ribs were delicious that way!

Great spares Foam! I've been saucing mine lately also. The family wants sticky ribs!

I really enjoyed these. My sauce was a little thin for West Texas sauce, I only just coated the ribs then cranked the heat up. They were just barely sticky and no caramelized sugars. I may need to try this on a chicken in the near future......

Dave they leave a nice smell on your hand that is really hard to wash off..... I like them too.

I could have cooked 'em 10 mins longer. One bad thing with the sauce, I couldn't use the break over test without breaking the ribs up, couldn't see that top muscle thru the sauce.. But they were close enough to be delicious. Just a bit more chew than a toothless old man now likes. Perfect for the olden days though.

Anytime Richie, just give me a day or two to find some more.... With all these baby backs and no one eating spares, were are all the spares going! I miss the good old days when a rack of spares would cover the whole grill. 'Course that was long before cryo-bags. I wonder if hogs grew larger before butchering back then? They sure seemed bigger when scraping...LOL

I found a picture the other day that I need to re-find. it was the last hog Pop and I butchered together. No, I don't think it has been longer enough even yet to forget how mucch fun it was. Cold, wet, scraping that that hog. LOL Nope, not me.
 
Kevin last year was the first time I made baby backs,me not being frugal cheap A** SO* spares were always on sale here.
