Spare Ribs - Dark

I'm hoping for some tips. I've smoked Spare Ribs in my offset firebox CharGriller several times now and each time they get very dark, almost black. Any ideas why that might be? Could it be too much smoke, heat too high, too much rub?

Bryan, I have noticed that on my smoker with ofset fire box that if I put my meat really close to the firebox they get much darker.  I now put meat about 8-10 inches away.  Not sure if this is too much heat, smoke or too heavy a rub.  Hope this helps.  I'm sure others will jump in with suggestions soon.  Steve
 
I thought it might have been too close to the firebox so the last time I did ribs I placed them as far away from the firebox as I could. I also did some chicken and had it right by the firebox and it didn't get anywhere near as dark as the ribs.
 
Here's the rib rub recipe I used.

   ¼ cup paprika

   1 tsp Sea Salt

   2 tablespoons brown sugar

   2 tablespoons White sugar

   2 tablespoons ground cumin

   1 tablespoon chili powder

   2 tablespoons freshly ground black pepper

    1 tsp cayenne pepper

   1 tablespoon onion powder

   1 tablespoon garlic powder
 
Is your exhaust wide open?????? How much smoke is being developed??????

Switch over to Turbinado, aka Raw Sugar, white sugar and especially brn sugar can get really dark at higher heat like that closer to the SFB...JJ
 
My exhaust was wide open, and there was a lot of Smoke, I honestly think it was a bit too much smoke. Next time I going to use more charcoal and add the wood as chunks instead of burning full logs.

Yea I know the pictures would be real helpful, and I can't believe I forgot to take some I'm normally taking pictures and putting them on FaceBook, but it completely slipped my mind this time.
