Spare rib question

I am pretty new with my smoker.  I've done several pork butts, tenderloins, chicken, and turkeys with great success.  I have even done a brisket that turned out awesome.  This weekend I tried spare ribs.  I used Jeff's 3-2-1 method and they were delicious!  I mean finger licking awesomeness but.... they were actually falling apart! I wanted them tender but this was too extreme.  What do I need to do? 
 
Cut back the time in the foil. The 3-2-1 method is a good guideline to start but most people will tweak the times to their liking. When in the foil is when they are getting most of their tenderness then we take them out to tighten them back up. Try 3-1.5-1.5 or even 3-1-1.5. You might have to play with the times a bit to get just what you are looking for but at least you will get to eat some good ribs while trying to perfect it! 
 
I like a little pull to mine too. If I were you I would cut back on your foiling time a bit as many others have done. What temp did you smoke them at?

 These folks gave you great advice.  As far as problems go it sounds like a good problem to have as you seemed to really like the taste.  In the meantime you get to practice some more and enjoy what you make.
