Spaghetti Di Calabria
1# Italian fresh sausage (preferably Calabrian style)
1 lg, yellow onion, sliced 1" X1/4" pieces
3 cloves garlic minced with a knife
1/4 cup white wine
1/4 cup Calabrian sweet pepper sauce
1/4 cup tomato sauce
1 tsp. dried basil leaves or 6 fresh leaves julienned
sea salt and cracked black pepper to taste
1# spaghetti
6 qt. water for pasta
salt to taste
In large fry pan, place sausage links and add 3 cups cold water. Bring water to a boil, poke links to release some fat(for frying). Boil all water out and fry links on two sides, remove to plate. Lower heat to medium and add onion. Simmer onion until translucent and pot is deglazed (Add a little water if sticking occurs.) Add garlic to onions and simmer couple minutes more. Add white wine and deglaze pan once more. Reduce volume to 1/4. Slice sausages into 3-4 pieces per link. Return sausages to pan. Add Calabrian sweet pepper sauce and tomato sauce to pan, stir in good. simmer 5 minutes. adda little more wine if too thick. Add basil, season with sea salt and cracked black pepper. Serve over spaghetti with a little Romano cheese.
