So we are in the middle of a menu change and the red wine braised short ribs are coming off and the sous vide short ribs are going on. Well two days before the menu change I sell the crap out of the red wine ones and because we are going to be changing them in a couple of days the butcher at work sends down, we think, is some sous vide tri-tip!!! Needless to say we don't sell any the next day...



OMG!!! They are so good!

Tasty! Tri tip is my favorite cut of beef. Wish the price didn't skyrocket this last year! Was at my wholesaler yesterday and brisket was $3.56 per pound and tri tip was $4.53. Used to be the other way around. Still beats the $8.99 per pound tri tip at Costco!
