Today I made some hot honey.
1 cup honey and 3T red pepper flakes. Bring to s rolling broil, stirring the entire time. Take from heat and cover, let the mix infuse.
So I mixed up my normal 500g mix.
reduced the water to 275g
10g salt
100g hot honey
100g active starter.
1T chili oil
Regular mix and cover.
First slap n fold.
Over night ferment.
Just pulled a bit and did the clasp method for the basket, cover and fridge.
I sprinkle some semolina on the top so the cover dont stick.
