Been really busy making sourdough focaccia for the market. 20 of them go every Sunday. We are going to another farmers market on Sat in West Point, ky.

Thes I mixed up this morning.

SD Discard Focaccia made with fresh milled organic hard white and Khorasan. (kamut) Home milled with berries from Farmers Storehouse.
Olive oil infused sun dried tomato/herb and black olive.

Man those are gonna be good!

I have never made focaccia. Only made boule and load SD. Is the main difference pushing the dough out in the pan and the EOO drizzle? I am sure that is a massive over simplification. But, what are the basic steps you use? If you dont mind sharing.
