Hello everyone. Name is Michael from Florida. Just bought a smoke vault and am seasoning it right now but already have questions. I have a dual meat probe and I tested them in boiling water they both read 216. Downloaded an app that said I am at sea level so do you think I should always subtract the 4 off my reading?
 
What brand of therm did you get?

I'm in FL too, although my elevation is 150 feet, my therms all read 212 in boiling water.

So yes just subtract 4 from all your readings.

I would also check them in ice water to see if it's 4 degrees off on that end too.

It really doesn't matter, as long as you know it's 4 degrees off.

You might want to get an instant read one too.

Then when the meat gets close to being done, you can check it in several places to make sure.

Thermoworks sells a Thermo Pop for about $25. They are very good.
