I will be making some snack stix but not smoking them. I normally start at 120 and slowly raise the temp when smoking until internal 152. Would there be any problem if I started at 160 seeing as I am only bringing up the internal temp and not smoking them.
 
I wouldn't worry about it. They will turn out just fine they just won't take nearly as long. Just try not to go over an it of 160. A few degrees over wont be the end of the world.
 
starting at that temp you could be in for a fat-out
 
I thought fat didn't render until 180. I am only going to 152 internal. How do you smoke sausage to 152 internal without cure using the 4hr rule and not get a fat out. These stix will have cure, I just thought they would finish quiker than the stix that I smoke.
 
Using a high temp, the outside will get done before the inside.

By bringing it up slowly, the stick will equalize and the temps will be even.
