I was a little lazy this morning but first batch is on. Got things to do late morning early afternoon so i doubt ill get more than two batches today.

But tomorrow is another day lol. This first batch is pepper/garlic and i decided on sticks instead of flat meat and second batch will be mesquite. This meat is a little less lean( 88/12) than i would like but its all they had. Its amazing the difference between 90/10 and 88/12 but it will work.

As you can see im not very handy with the jerky gun lol they look like worms. Or like the wife said turds lol.

both batches done in my camp chef smoker/grill on high smoke ( 225) first batch i pulled at 2 hours and they were very tasty and they were about perfect when they cooled. I pulled the second batch ( pictured here) at 3 hours and and as you can see they are for sure done more but equally delicious. they tend to firm up and the flavor gets bolder as they cool so we will see what 3 hours is like after they cool.

They are a little ugly, but I bet they taste great!

A little ugly lol. they sure do taste good. i froze some (hope they still taste good after lol) for my nieces baby shower in two weeks.
 
Looks tasty! A tip for you when you are drawing them out do long strips. Then after you smoke them cut to the length you want. It will give you a more consistent shape.

i thought about that and while i know they are cooked and dont really last that long( people eat them pretty fast lol) I figured it would be better if the ends were so to speak closed and not exposed. esp if they dont get eaten that fast

WBS, I call your sticks "UBE" ugly but effective. :) Seriously though, they look fine and very tasty!!!
