Doing a batch of snack sticks. I typically hang them in my MES but trying racks this time. I think I can fit more in the smoker. I cut them to length and placed on racks. Is this meat oozing out of the end going to be ok or should I have tied them?

Tie in the future, but you should be ok, they will dry at the ends and quit oozing.

Update: Turned out just fine. I actually will probably do them the same way in the future. My best sticks yet.

Yup this. The sticks will be perfectly fine but that little bit of meat ooze will get dry that squeezes out. Not a huge problem though. Just cool as usual then trim.

I forgot to add this earlier, but like I said, I never tie my sticks casings. I make the sticks as long as I can to fit my smoker racks anyway. After smoking and cooling, I trim the two open ends clean, and, I cut each long stick into 3 nice clean cut sticks for vac packing or eating. The number of finished sticks you get per row may vary based on the size of your racks. The ends I cut off are eaten first and are bite sized treats.
