Time to start processing geese and deer from this season. I've got a question out sticks should I hang them in smoker would it be alright to coil them up ona rack and cut after?
 
I think that would be fine. I hang mine. Just make sure that your coils do not touch each others. If they touch, you will not get smoke on the contact areas.

Coiled is fine. The finished product will be straighter if hung, but that may not matter.
