Smothered Cabbage Recipe?

I was watching Top Chef a while back and this guest judge made a dish he called smothered cabbage. It looked and sounded so good. Anyone have a recipe for smothered cabbage by any chance?

Here a shot of the abt I made at river today. I have made 3 times now and they better than sausage. Just a hunk of cheddar cheese and seasoned with Jeff Texas Rub.
