Smoking wings the day before deep frying

    Hello, everyone,

    I'm planning on smoking and deep frying about 30 lbs of wings for my daughter's birthday this weekend.  I won't have enough time to smoke them all the day of the party.  I was thinking to smoke them the day before, refrigerate overnight, then fry them up right before the party.  Has anyone done this with good results?  Any input would be great.

    Yes, Brinker. This how  was speaking of in the previous post , works well.
