Hey All,

I picked up 5lbs of brisket at BJ last week.  Upon unpacking, it was 3 very this flat cuts.  The thickest section of meat is about 1 inch.

Does any have any suggestions how to smoke this without drying it out?  should I fold the meat to make it thicker?

I would try tying them together, or rolling them up & tying them.

Try to turn the three into one big piece of meat.
