How long do you worry about keeping the smoke going on say a good size brisket?  I've been going about 6 hours of good smoke and then catching some shut eye until it's time to do some mopping.  Is this on par with most of you all?  I just don't see it absorbing much more smoke after that or am i off?

The meat will continue to absorb smoke as long as you keep it in smoke.

It all depends on how much smoke flavor you want as to how long you leave it in the smoke.  My personal preference is about 6 - 8 hours of smoke.  I keep it on the smoker but I don't add anymore smoking wood.

Good luck,

Bill
