Smoking some ribs and a fattie with pictures (WIP) pictures

Got up this morning got the ribs ready. Covered them in mustard and then put my run on for the smoker to 250 and put them on. Just got done making the fattie (kind of) I was planning on doing a bacon weave but I’ll have to figure out another way to wrap it in bacon. I got bacon from my local butcher and it looks incredible expect it’s short and not very uniform in size but I’m certain it’ll be incredible so I’m sticking to it. I honestly believe I’m going to start buying more of my meat from him. I know he doesn’t put anything in it. I’ll add more pictures and posts as my day continues. Thanks for looking.

Doing a 3-2-1 method on the ribs. Here is where I took the ribs off and covered them in honey and brown sugar. Then I wrapped them in foil and put them back on along with my poorly wrapped fattie.

looks good, yeah people tend to forget quick what it looked like when they are chewing on some good smoked foods.

Well after 5 hours I pulled the ribs I coated one of them in bbq sauce and honey and one in just honey then I wrapped them up and put them back on the smoker. Things are looking good. Gonna take the fattie off here before too long and put it in the oven at a hot temp to crisp the bacon a bit. Today’s smoke is being helped out by this Founders lager. Loving this beer right now.

Sorry for the delay I ate till I could hardly move then I rolled myself to the couch and started this. Here my spread of smoked Mac and cheese, wet and dry ribs, and a pizza fattie. My family and guests are stuffe and relaxing now. Great feeling. Thanks for following.
