I made some bratwurst sausage yesterday used cure that came in the kit I had which was from high mountain seasonings. I froze some packages and kept some out to smoke. I really like the smoked sausages better, just wondering if thawing the sausages I frozen to smoke them and then freeze them again is a good idea? There made from pork and beef. Thanks
 
I wouldn't recommend it. Main reason is it will probably effect the texture. I also remember reading somewhere that freezing effects the cure, but I can't remember if that's true or not. And I can't remember where I read it now.

What you can do when you go to use them is cold smoke for a few hours then hot smoke to finish.
