I recently purchased the Smoke Hollow 44 propane smoker (non-window version, 2 doors).

I would love to try smoking some salmon, but am not sure I can get my smoker to smoke at 120-150*. This weekend when I smoked a turkey and Mac n cheese it was extremely hot in it and took all I could to keep it at 225-235*.

Am I doing something wrong to keep it low? Any recommendations on Smoke Hollow 44 Propane Smoker on how to keep it on 120-150*? I had my two vents open and used the water pan.

Thanks!
