so i was asked to smoke a pork butt for my family christmas party this year. problem is it starts at 2pm and im not staying up all night to babysit my stick burner, so i decided to smoke it the day before and just reheat it in the oven for the party. how much do you think i need to let it cool down before i put in the fridge for the night? im going to have to start this smoke mid morning since its still goose season and ill be doing that in the morning, so this might not get pulled till 10pm. think once its pulled apart in the tray i can stick in the fridge or is it cooling down that fast going to screw something up?
