smoking pork for the next day

so i was asked to smoke a pork butt for my family christmas party this year. problem is it starts at 2pm and im not staying up all night to babysit my stick burner, so i decided to smoke it the day before and just reheat it in the oven for the party. how much do you think i need to let it cool down before i put in the fridge for the night? im going to have to start this smoke mid morning since its still goose season and ill be doing that in the morning, so this might not get pulled till 10pm. think once its pulled apart in the tray i can stick in the fridge or is it cooling down that fast going to screw something up?

How fast it cools after it's been pulled wont make any difference to your quality. Just make sure it's cool enough to go in your fridge so it doesnt raise your fridge temp which may cause some of your groceries to spoil

I agree that the pork will be unaffected by going out not the fridge warm but the fridge will be. I’d let it set loosely covered after it’s pulled or you could shock cool it in an ice chest full of ice. Then after a bit of time in the ice you could swap it to your fridge with no issues. If your ice chest can hold enough ice you might be able to just leave the pork in the chest and skip the fridge altogether. I love pulled pork congrats to your family for picking a delicious option for your Christmas meal.

Agreed with the others and just take some of the heat off it before the fridge. Also pull outside unless you want whole house smelling like PP the whole night and nobody sleeping. Don't ask me how I know this. :emoji_laughing:

thanks for the info guys, i just might grab an old ice chest and keep it in there over night in my shed.
 
If you lived in ND right now, you could set it outside. Would have to check it in 15 mins cause it would probably be froze. :emoji_laughing:
