  1. Hello all,

My name is Tony and I have recently purchased a Masterbuilt 30" smoker.  I've already cooked some ribs, pork and chicken on it and it came out okay.  I was doing in internet search for how to really use this think and the SMF site came up and I've been hooked since.

I'm most interested in learning how to best cook baby back ribs, brisket and pulled pork.

I look forward to getting to know the folks here, learning techniques for better food and contributing what I learn along the way.

  2. Good morning Tony! Welcome to SMF and the wonderful world of smoked food!

We're glad you found us in your search. You might be interested in Jeff's Free 5 day Smoking Basics e-course,

I own the MES 40 and the first thing I learned was the set temperature and the actual cabinet temperature are off.

Get you a good thermometer to check the two temperatures against one another. There is an Electric Smoker sub forum here

that you might find some helpful tip or you can use the search bar above.
