I purchased a package of breakfast sausage patties from Porter Road. They are frozen. Can I smoke them frozen or do I have to thaw first? Maybe smoke them longer so the smoke will penetrate while they are defrosting in the smoker?

Depends on your smoke temp. You can‘t low and slow them but you can smoke them at or above 225F

Approximately how long?
If it’s pork sausage, cook until internal temp is at or above 145. From frozen I have no idea on time. Won’t be very long though and you likely won’t get much smoke flavor either.

To me Pattie’s are best grilled high heat over hot coals. Again not a ton of smoke flavor but it is there enough to taste a difference.

Uncured ground pork needs to be 165 internal temp .
