Going to be attempting to smoke a bit of steelhead I picked up at Costco as an experiment. Traeger only goes as low as 165 so I'm not going to be able to go super low on the temp. I was thinking maybe 2 hours of cold smoke before getting the traeger going. Looking for some advice since I can't get the lower temps I see people recommending.
 
Welcome. Quite a few guys here have done it. Fish picks up smoke flavor easily. I generally hot smoke salmon for couple hrs. Others brine for bit then smoke. Several recipes here for salmon jerky/lox etc.
