Everytime I smoke chicken the skin turns to what i call shoe leather, am i cooking it a too low a temp?
 
Cook your Poultry in 275*F to 325*F for better skin. Don't sauce till last 20mins. Then enjoy

  Or put on a hot grill skin side down for a few minutes to crisp up the skin.

what I have been doing is smoking chicken halves with hickory chips, gives it an awesome sweet smokey taste, I can see from some of the replies I am using too low a temp so i got to work on that...thanx for the replies guys I will let you know in a future post how it goes.
