I smoke 9 dozen then put them in the broiler till they were crispy. Covered them with a few different sauces and then devoured them. Well at least three dozen. Saved the rest for this week.
I'm pretty new at this but have tried wings a few times now. I found throwing them on the grill after smoking really helped crisp up the skin and caramelize the sauce. Turned into the best wings we've ever had
