I plan on smoking a brisket and I'll probably try the recipe for bacon-wrapped Kielbasa that is on Jeff's page. Just curious if anyone else has plans on smoking.
 
I'd love to but I'm visiting my grandparents and they don't have anything at all to smoke with. I'm honestly tempted to grab some cinderblocks while I'm there and try to whip something up lol
 
Bacon wrapped kielbasa sounds great. I'm still trying to decide on this weekend. I'm doing a big smoke for my daughters birthday next weekend so might grab a brisket out of the freezer and let it ride while im cleaning out the garage.
 
4 pound pork loin for CB, almost done with the cure process. Will also throw a couple of slabs of baby backs in the smoker too.
 
Smoking a brisket right now to become pastrami. When it gets to 145F it will go into the sous vide bath for 24 hours or so. Then chilled for another day before slicing. Aiming for pastrami sammies on Memorial Day.
(Around here Memorial Day is whatever day the Indy500 is held - Sunday.)

12.5 lb prime brisket :-) and prob some chickens as well
 
Keeping it simple with a nice marinated boneless leg of lamb roast.
 
Ribs...2 racks of St. Louis and 2 racks of baby back...
AND something new for me (on the smoker)...a peach cobbler.
Might do a fatty if I've got some time...
I've been questioned several times about what a fatty is...
They are usually not something I do for gatherings but for meals for myself...and folks are curious...

Saturday going to smoke a beef tenderloin for dinner with some friends, going to get up early Sunday morning and smoke 4 shoulders for pulled pork for some friends.
 
I smoked a brisky, pork butt, and burnt ends last wknd.. Vac-sealed and ready for my trip to Muncy. Turkey hunting, target shooting, eating and porch sittin on my agenda for 4 days
 
My first shot at Briskets. I have 2- 6lbs briskets. I am going to use Jeff's Texas rub. This will be my first time smoking any beef. I do lots of chicken, turkey, and pork. Thinking about starting it around 4AM.
 
I’m Smoking a brisket Saturday or Sunday and probably making burnt ends out of the point. Also gonna do a smoked Mac and cheese and some esquires too. I made 4 different bbq sauces yesterday for the weeend as well.
