Ohh i know right,it smells wonderful! Im usually a hickory or oak kinda guy. Sometimes maple. But had some apple wood laying around

I agree with not wrapping chicken or turkey. They don't seem to stall and cook fairly fast. Crispy skin to me is what sets these off.
