Gonna be doing a pork shoulder about 4.75 lbs. I have a masterbuilt sportsman elite electric smokehouse, was wondering generally how long that would take and how would I keep it moist without spraying it? Thanks fellas keep on smokin'
 
At 225 to 250, you can figure 2 hours per pound. May go a little over with a long stall during a start to finish naked smoke. You can save time by taking it to 160 , 4-5 hours of smoke, foiling and finishing in the oven at 300. If done early, foil, towel and a cooler will hold the meat hot 4-5 hours. Butts stay moist all by themselves, no spritzing needed unless to smoke hot and fast. Spritzing adds 20-30 minutes to the cook each time you do it because of evaporative cooling and opening the door, releasing heat...JJ
 
We're smoking 2 6+ pounds Burkeshire pork shoulders at 210 on a Komodo smoker. We started the smoker about 1230 it was still running about six 615 it went out we were last at 7:30 we restarted it at 225 any other recommendations
 
I myself would keep cooking til it comes up to temp, or get it close to temp then maybe wrap tjem in foil and a towel and put in a cooler and let it rest for a couple hours. But im a newbie so id get some more advice
