I will be smoking a brisket for the first time tomorrow. Ever since i got the smoker my wife has been asking for ne to smoke a brisket. Since its valentines day tomorrow i figured i would smoke one for her. Its just us 2 in our family so i found the smallest brisket i could find. It is 2.8 pounds, not very big but it will work for the 2 of us. Could i get some tips on smoking this? Im using a master built electric smoker. Should i smoke it at 225° for 1.5hrs per pound? Any tips or suggestions would be great. Thanks
 
Steve chk out the threads on briskets, It is not that big so it should be quicker, Still go by IT. Good luck for your V.day dinner.
 
I would definitely wrap or pan at 160 or so with some broth or something. Start probing for tenderness around 200. Let it rest slice and eat. But I go out for valentines dinner.:biggrin:
 
Those small flats have a tendency to dry out, so I smoke mine in a pan with some broth.

Your looking for an IT of 195-205, or until probe tender.
