I was reading an old post from 2012 . The post had mentioned smoking liver and onions . Big bunch of people commented how they hated liver. Lol naturally.

Al, you said you actually like liver and thought about trying to smoke some.
I just wondered if you did yet? Or if you thought of a way to smoke liver without turning it to boot leather?

Thinking maybe to keep the liver slices on a bed of ice. Turning the liver a few times over a couple hours at low low temps. Maybe keep the liver on a rack raised just over the ice in a Pyrex 13x9 . Don't want to have the liver cooking before it's smoked.. liver cooks in like 3 minutes in a hot cast iron pan.. can do that later

No I never have smoked liver, but I'm sure it would be good.

I don't know why you couldn't smoke it in a pan with some chicken broth & onions.

I think I would try 225 for an hour or so & see where you are at.

If you do it let me know how it turns out.

Yeah.. I've only cooked it in hot butter for just a couple minutes.. it gets tuff fast. I will get extra and try both .. I have homemade chicken stock too.

Big liver eater here: pate, liver with onions, offal sausage, liver steak... to name some of my uses of liver. I also like to give it a workout with some wine :-)

For liver with onions i would take the shortcut: liquid smoke.

I have to at least try smoking calves liver once. This may end up saving other people the time and $ .[emoji]128512[/emoji]
