Minus the jalapeno and the cheddar , wanted to do these plain first time out . Also all pork ( deer meat didn't want to thaw ) rest of ingredients are the same as Al's recipe .
trimmed alot of fat out before grind .

First time I did sticks ( 1/2 " ) I waited to long .
All I could do to crank the handle . So from then on I'm ready !

Getting some good smoke . Time to shut that down . 12 " tube with mail box .
oak and hickory pellets with apple chips mixed in . Been in about 4 hours , IT around 107 F.

All done . took about 8 hours . The added spices to the pepperoni mix are really good . All pork not bad , glad I trimmed the fat . Venison mix would be great .

Thanks for lookin and comments . Gonna let them dry a bit more in the fridge . The 1 cup water might have been to much for the pork only grind . Sure made the Lem easy to crank . Taste is really good , and the smoke was great , even peeled . Adding the wood chips to the pellets makes a difference .
