I will be coming over to the UK in June to "smoke" pork for around 850 people. We use the shoulder of the pork. I am needing some Primo 'lump' charcoal and some native wood that you use in the UK to smoke meat. We use Pecan, Hickory or fruit woods over here. We will be cooking in the Cannock/Stafford area of England. I am needing help over on your side of the pond to advise me on the best way to get supplies that I use to cook while in England.
