Smokin' for the in-laws

Me and the hubby decided we would handle grub for the 4th for the in-laws (his parents and family), so the smoker was a natural (and the only!) solutuon for us.

They're coming over on the 5th (only day everyone is off), this gave me a day to cook ahead of time. I prepped two small boneless butts, 2 racks of ribs and a 1.5 chuck roast a day or two before. This morning, was up at 7 to get the meat out of the fridge for a warm-up, the smoker was fired up at 8:10, and meats on at 8:30. Was a pretty smooth smoke - ribs were done 3-1-1 and done at 2 pm, chuck was put in to rest at 2:25, at this time, one butt was 188 and the other 159, with the GOSM clicking along at 260. The last butt hit 197 at 3:40... and here's a few highlights:

Jocassa - really nice smoke ring on all the finished products. Your in-laws will love the food and I'm sure will be taking leftovers home (if there are leftovers!).

Thanks y'all!! I'll be working on part two of this here in a little while... Dutch's beans (my first time with those), two plain fatties, and one stuffed with onion, cheese, pepperoni, and two cheeses.

This is the first time the in-laws have been over for any kind of meal, so keep your fingers crossed that they're half as impressed as y'all have been!

Thanks again for the support and the pep talk... at least my FIL is a big BBQ/grillin' kind of guy...

The hubby is talking like we may be adding another smoker in the future...

Here's the report - in-laws loved ev-er-y-thing... :::whew!::: Sent leftovers home with BIL, SIL, and FIL... when they found out homemade BBQ sauce was available in jars.... there was almost a scuffle.

Dutch's beans were a total hit... SIL said something to her mom about "you need to make beans like this..." and the MIL said "we'll just let Tonya (that's me) make them and bring them to gatherings..."

FIL is a rib fanatic... and was begging for people to leave them alone so he could have some to take home... lots of smiles and second helpings. Gotta say that really made me feel good!

Everything we smoked was almost gone... all we have left is maybe a quart bag of pulled pork left, about the same amount of beans... no ribs! The smoked chuck is reserved for us for a couple of sammiches and the rest will be frozen for future chili...

The fatties are reserved for breakfast tomorrow morning and the next few mornings - they'll be gone soon too!

As always, I appreciate all the pointers and lessons learned on the SMF!
