New to the smoking thing and found this site after building my own offset smoker. The only things I know are what I have seen on TV and that's not much. I have tried cooking on the grill low and slow with decent results but never tried smoke. Here in Chicago you can find a lot of good food but the pickings are slim for BBQ so I thought I would do my own. I more enjoy the Memphis style BBQ because I have it when I visit my folks in Tennessee but in all honesty I love meat. So if I can find another to make that's all the better. And this hobby the wife seems to favor more than the others...probably because she like BBQ too and I don't have to leave the house to do it.

Thanks for the welcoming words. I just updated my profile and am already on day 3 of the ecourse...very informative stuff. I plan on giving a pork shoulder a try this weekend so wish me luck.
 
Well finally fired up my smoker and have learned quite a bit. 1 my fire box doesnt have enough air flow and lump coal and chucks dont provide enough heat on my current setup. I have had ti resort to a "forced air" method by using a fan to add the necessary air to get and stay at temp. BUT IM NOT giving up if this shoulder takes until midnight to finish then so be it.
