I have a recipe for smoked wings that I have tried for the first time today. The flavor came out great however the skin was very rubbery. Im not looking for crispy skin on these wings as I am replicating a local restaurant recipe. I marinated them over night and smoked on my pellet smoker for 3.5 hours at about 180 degrees. What can I do to remedy the rubbery skin?

Smoked way too low for wings. Up the cooking temp to about 275° Rubbery skin is a No Bueno for me
 
I usually smoke mine at 300-325 for about 1.5 hours. Have to go higher temp for the skin to crisp up unless you are going to flash fry them. I believe chicken only takes in about an hour or so of smoke.
 
Same as everyone above I run minimum 275F and usually drift up to 300F. They come out bite through every time. Also doesn't hurt to let them air dry uncovered in frig a few hours.
 
You can always do a couple of hours at a low temp & then finish them up on a grill to get the crispy skin your looking for.
