I have a couple pounds of wings to smoke tomorrow. In the pastI have done them by marinading in Franks, then smoking till about done then tossing on the gasser to crisp up. Works ok. BUT, I feel they could be better. Considering these options:
  1. Wet marinate in Jerk marinade
  2. Dry rub with jerk rub
  3. Dry rub with Meat Church Hot Honey
thoughts on dry rub vs wet marinade? Thanks, I will attempt to get full pictures this time...

I like dry myself . Just depends on what you're going for . Franks has some buffalo wing shaker seasonings that are good in my opinion .
This is a homemade Carolina Reaper / pineapple rub I made
from a hot sauce ferment .

Not smoked , but you mention the gas grill . I have a good start to finish
method for the Genesis if you're interested .
 
I usually just salt and pepper them, start them at 225 for 45-60 minutes then crank up to 350 until they get a crisp to them. When I take them off smoker I roll them in a hot sauce or sometimes just eat them plain.
