I had them sitting in a lemonade bath for about an hour or so before I go them on the pit. Patted dry, applied my custom curry sauce and they were set. Smoked these guys up from 260-300 for 2 hours and tossed them on a propane grill to darken them up a bit in the end. They were crispy and gone in minutes.
