Did this turkey breast roast for dinner yesterday, brined, basic garlic an herb seasoning and ground pepper, wrapped in some bacon and smoked at 250 for about almost 3 hours.

Love smoked Turkey. What did you take the IT to and did you rest it long?

try pulling at 156-158IT next time. I use to go to 165 then tried 156 and it was a world of difference.

I actually wanted to pull at 160, was late getting off though, I'll defy pull earlier next one. Thanks for the input.

I can only seem to find the turkey rolls around here, not just the breast . But I keep looking.
As I would love to do this.
Maybe I will just pick up whole turkey when on sale and part it down.

Excellent! I buy the whole bone in breasts and turn them into turkey sammiches for days.
