Hello fellow smokers. It's been a while. Thanksgiving is coming up and I'm fixing to smoke my first turkey in the Traeger. I have a brining kit so I can brine the bird for 24 hrs. Any thoughts on how to smoke it without drying it out? Also want some ideas on a turkey fryer as well. In Dec, I want to fry my turkey. Should I go traditional oil fryer or the new infrared oil free fryer?

If you don't want a dry turkey, just don't overcook it

I part mine out, breast gets pulled at 157, thighs get pulled at 175.

Rest on counter for 30-40 minutes & carve it up.

The carryover cook will bring the breast up to 165, & the thigh to 180.

The thigh needs to cook longer to get moist & tender.

The breast is just the opposite, overcook & it's dry.

I have a Masterbuilt electric turkey fryer, it is awesome!!!

I smoke a turkey on the WSM, it's a free range turkey with no additives and I brine it prior to smoking.  I also do a Butterball turkey in the Masterbuilt electric fryer.  It is super easy and delicious.

I know what you mean B!  I like the no additives part, but why does it cost more for a turkey that has no additives?  Like when they stopped adding lead to gasoline and charged more for "unleaded".
