Smoked Stuergeon

  1. good Morning to all,

    I have some sturgeon from a great friend, I have smoked many types of fish over the years just not sturgeon (light flavor) all that I have done is in various different brine's. I have searched back in threads and the best I can find is from 2008-2009, does anyone have any updates as to their choice of brine, drying then curing (times and temps)
