A buddy rought over about 6 lbs of Sockeye over to smoke. He already brined it and I supplies the Magic Smoke.

He cut the pieces in a cross hatch pattern and I liked the way it came out for serving!!

Looks good Tastes even BETTER. Smoked in my Lil Cheif with a combo of Alder and Hickory.

Yeah, I had to sample a piece.....

What exactly is sockeye, never heard of a cut of meat with that name.
 
Sockeye is a type of salmon usually found in the copper river in alaska.
 
Sockeye are found from Alsaka to Oregon. They spawn in fresh water and turn red in color at that time. Sockeye are a smaller salmon that go to see and there is the kokanee that stay in fresh water their whole life even smaller.
 
you tried cold smoking salmon ?
Really really good and dead easy.
A cold smoke takes about 4-5 hours in my bradley - how long did you hot smoke yours for ?
 
What pit temp you running for cold smoking? I have never gotten salmon done that quickly cold smoking.
 
Made that one myself. It is all end-grain so it will last longer than me and probably longer than my daughter too... It is made out of Maple, Walnut and Brazillian Cherry. Here's pic of the whole thing....

I had the Sockeye on for about 5-1/2 to 6 hours in the Lil Chief. Please elaborate on your cold smoke method.....
